Knife Skills 101: The Only 3 Cuts You Actually Need
Forget the YouTube knife-skills rabbit hole. Master these three cuts and you can prep 90% of weeknight recipes confidently.

You don't need ten cuts. You need three — done safely and consistently.
1. The rough chop - For aromatics that will be sweated down or blended. Speed > precision.
2. The dice - Even cubes (small/medium/large) so things cook at the same rate. The whole game is consistency, not perfection.
3. The slice - Thin, even pieces for stir-fries, salads, and quick sears.
4. Grip - Pinch the blade between thumb and forefinger. Curl your guide hand into a claw. Keep the tip on the board and rock.
What to practice this week
Take one onion. Dice it medium. Do it three nights in a row. By night three, you'll be twice as fast.
